One of the reasons Tucson was named a UNESCO City of Gastronomy is our food heritage. Today in the Santa Cruz basin we eat some of the same things residents here ate thousands of years ago. One of those plants that have persisted in our diet over millennia is prickly pear fruit because it is delicious, abundant, and easy to gather. Carolyn Niethammer is an expert in ethnobotany, local foods, and the history and cuisine of our City of Gastronomy. She is the author of The Prickly Pear Cookbook and Cooking the Wild Southwest, and A Desert Feast: Celebrating Tucson's Culinary Heritage. Join Carolyn to learn how to easily make prickly pear juice, and how to turn it into syrup, salad dressing, and even ice cream.
